CHEESE and DAIRY dishes

I suggest a COUNTY OF SCLAFANI DOC PINOT BIANCO or SAUVIGNON.
MOZZARELLA AND DELICATE AND FRESH CHEESES
I suggest a SICILIA DOC BIANCO INSOLIA IN BLEND.
CACIOCAVALLO IBLEO OR PALERMITANO
The SEMI-SEASONED one goes very well with MARSALA DOC VERGINE.
The SEASONED one, better to a SICILIA DOC SYRAH.
GOAT CHEESES
I prefer a combination with sicilia doc sauvgnon.
RAGUSANO PDO
The SEMI-SEASONED one goes very well with MARSALA DOC VERGINE.
The SEASONED one, better to a Sicily white wines, while the seasoned one prefers a SICILY DOC SYRAH.
THE SICILIAN CANESTRATO
I find excellent pairing with a SICILY DOC RED CABERNET SAUVIGNON IN PURITY.
THE SICANO FLOWER
It goes very well with a SICILIA DOC NERELLO MASCALESE. A OF SHEEP
PECORINO SICILIANO PDO
The FRESH or SEMI-SEASONED one goes very well with MARSALA DOC VERGINE.
For the SEASONED one, better to a MONREALE CABERNET SAUVIGNON DOC.
THE PIACENTINU ENNESE
I find ideal the combination with a CERASUOLO DI VITTORIA DOCG.
THE PROVOLA IBLEA
It goes well with a CERASUOLO DI VITTORIA DOCG.
THE PROVOLA OF THE NEBRODI
When it is not very seasoned, it goes perfectly with an ETNA DOC BIANCO.
When it is SEASONED it goes perfectly with a FARO DOC.
PRIMOSALE
I like the combination with a SICILIA DOC CHARDONNAY, however sometimes I have combined it with pleasure also with a MALVASIA DELLE LIPARI DOC.
THE LOST TUMA
It goes very well with a SICILIA DOC NERELLO MASCALESE.
THE VASTEDDA OF THE BELICE VALLEY
It goes very well with a FRAPPATO DOC SICILIA.
THE MAJORCAN
It goes very well with Malvasia delle Lipari DOC and MARSALA DOC VERGINE.
BAKED RICOTTA
It goes very well with an ETNA ROSSO DOC.
