The wine:
VINIFICATION: it is carried out in compliance with EU Reg. 203/2012 which regulates organic winemaking. The newly ripe grapes are harvested by hand and pressed whole with soft pressing. The fermentation takes place at a temperature of 16-18 ° C in steel tanks. The wine is left for a certain period in the tank to refine on the fine lees before being bottled.
