Winemaking: In stainless steel tanks at controlled temperature (25/26°C); once the base wine has been obtained, the "tanning" is carried out, which consists in the addition of ethyl alcohol of wine origin, cooked must and mistella to the starting product so that it can acquire that organoleptic and sensory complexity, typical of Marsala wine.
Color: Brilliant amber
Smell: Ample, intense and enveloping, it has hints that recall candied orange peel, dried figs, dates, caramel, which are combined with woody and spicy notes of vanilla, coffee and chocolate
Taste: Sweet and harmonious, with a pleasant complexity, consistent with the nose and with a good final persistence
Alcohol content: 17,00% vol.
Residual sugar: 50 grams/liter
Aging in wood: Minimum 1 year in oak barrels
Maturation in bottle: Minimum 1 month
Combinations: Excellent for the preparation of meat and zabaglione in the kitchen; generally it is drunk pleasantly in the company of Sicilian pastry products

DOC stands for Denominazione di Origine Controllata. It is the historical acronym established in the sixties and known throughout Italy to identify quality wines produced in small or medium-sized geographical areas with characteristics attributable to the vine, the environment and production methods. The Denomination of Controlled Origin today is an acronym no longer recognized: a European resolution has included these products in the most modern PDO mark, but the use is still allowed as a traditional specific mention.
