DOC stands for Denominazione di Origine Controllata. It is the historical acronym established in the sixties and known throughout Italy to identify quality wines produced in small or medium-sized geographical areas with characteristics attributable to the vine, the environment and production methods. The Denomination of Controlled Origin today is an acronym no longer recognized: a European resolution has included these products in the most modern PDO mark, but the use is still allowed as a traditional specific mention.
How does it match?
Fish, molluscs and crustaceans, fresh cheeses, cold cuts, eggs and risottos, pasta with light sauces, chicken, fresh pasta. Excellent as an aperitif.

The Grillo "Kebrilla" by Cantine Fina is a dry white wine from Marsala that tells the face of one of the oldest vines in Sicily. We are faced with a grape that, among the many cultivated on the island, is perhaps the one that best recalls the aromas and the richness of sensations. So it happens with the "Kebrilla", in which you can appreciate the enviable freshness on the palate and the elegance of the fan proposed on the nose, where the flowers of Sicily take on different forms, alternating with territorial references in which the flavor of the nearby sea and the breezes that caress the vineyards is felt with precision. A label also characterized by an excellent quality-price ratio, further value of a bottle born from the passion for Marsala.
"Kebrilla" is a pure Cricket, originated from those parcels located in the western part of Sicily, about 150-400 meters above sea level. Between the rows a Mediterranean wind blows, full of iodine, and the vines are processed with organic farming practices, so as to protect the environment. The harvest takes place towards the end of August, and after pressing the berries the must ferments in stainless steel containers at a controlled temperature. The wine is then transferred for a quick passage both in barriques, in cement and in stainless steel containers.
