The Zibibbo Secco "Jasmin" by Firriato is a Sicilian wine produced with one of the oldest and most fascinating white grape varieties grown in the Mediterranean area: Zibibbo or Moscato d'Alessandria. It is a very ductile aromatic variety, suitable for the production of sweet wines, but which today is experiencing a period of great success with dry vinification. Its delicate floral aromas, fresh and fragrant fruity aromas, its savory freshness, make Zibibbo a very suitable wine to be tasted with seafood appetizers and shellfish. It is absolutely unsurpassed with a plate of red prawns from Mazara del Vallo.
"Jasmin" is a pure Zibibbo that was born in the Trapani area, the Sicilian cradle of this extraordinary aromatic grape. Although the Firriato winery was born only in the 80s, in a few decades it has been able to establish itself as one of the most important realities of the whole island, contributing from the renaissance of Sicilian wine in the name of quality. Today the estate has land in various areas of Sicily, but the original nucleus of the company is located in the countryside of Trapani. It is precisely on the clayey lands of the Borgo Guarini Estate that Zibibbo is cultivated. The beautiful hilly area, between 300 and 400 meters above sea level, is located deep inland from Trapani, towards the south coast of the island. At the end of the soft pressing, the must is sent for fermentation in stainless steel tanks, with a duration of about three weeks. Before bottling, the wine rests for a few months in steel tanks on the fine lees.
