VASTEDDA IS A DOP AND ORGANIC SHEEP CHEESE WITH A SOUR, SWEET AND FRESH TASTE: BRING SICILY TO THE TABLE!

It is the only spun paste sheep's cheese. The term Vastedda comes from "vast" that is "spoiled" precisely from the attempt of the dairy farmers of the past to recover those pecorino cheese that for the excessive heat went bad.

The product is characterized by the craftsmanship of genuine Sicilian raw materials, carried out according to strict respect for the Sicilian tradition to enhance the taste.

Production: the milk coagulates in a wooden tin at 38°-40° C with lamb rennet. The curd is broken with a wooden patella and firmed in "rush bands".

For about 24 hours it is left to rest and then, cut into slices, it is spun with the sheet and the help of a stick. It is extracted with the hands and placed on soup plates (vastedda) to give it its classic shape. In brine for about 2 hours and after being dried it is ready for consumption.

Ingredients: Sheep's milk, Lamb rennet paste, Salt

Aspect: Solid, compact and rindless product, ivory white in color, it is delicately scented and in the mouth prevails a note of butter with a background of herbs from the Valle del Belìce, such as grasses and valerian

Treatments: The milk from milking is coagulated at about 35-36 ° C with lamb rennet. Addition of hot serum at 55-60°C, cutting the mass into slices and addition of water above 90°C

Kitchen: It can enter a first elaborate, in a second and is also excellent with combinations of jams or citrus jellies. It can be consumed as it is or with the addition of extra virgin olive oil, tomato and oregano.

Slow Food Presidium:

The milk comes from a native breed: the Belìce sheep, a medium-sized animal, with a fine, elongated and light head, robust limbs and white fleece.

The Presidium, which has less than a dozen producers, in addition to cheese aims to protect the sheep breed.
