PAT stands for Traditional Agri-Food Product. It is a trademark used exclusively in Italy to distinguish traditional and niche products, with such a reduced diffusion that it does not contribute to the assignment of protected denominations such as PDO and PGI. The aim of the brand is to enhance the local specialties obtained with traditional processing, preservation and maturing methods.
Almonds are a PAT product: Sicilian cultivars have a higher content of fats, amygdalin and sugars than other almonds, which give confectionery derivatives a unique and inimitable flavor. Another salient feature is the absence of alphatoxins in the fruits, due to both the climate and cultivation techniques.
Sicilian Pistachio is a PAT product: no other pistachio has such a bright emerald green color and such an intense, reinous, fatty aroma. Its trees are a tangle of thin and twisted branches that in September turn pink, for the bunches of pistachios that, closed in the husk, look like sugared almonds. It is a demanding and tiring cultivation both because the plants bear fruit every two years, and because they grow in rough terrain where it is impossible to use the help of machinery: pistachios are in fact harvested by hand, one by one.
Condorelli was founded in 1933 by Francesco and Pina Condorelli in Belpasso. Thanks to the invention of the nougat in the sixties just from Condorelli the brand acquires a great fame and notoriety both nationally and internationally that leads them to participate in various television broadcasts. Surely the nougats are the flagship products of the company that represent the majority of the sales of it.
