The fruit of Martorana is a typical Sicilian dessert, whose origin was in Palermo. It is a dessert famous in the world because its preparation and packaging provides, in shape and appearance at the end of the preparation process, the perfect imitation or reproduction of fruit and vegetables on a smaller scale. Internally it is similar to marzipan but noticeably sweeter and tastier. The basis of his recipe is exclusively almond flour and honey. It is a product included in the list of traditional Italian agri-food products (P.A.T.) of the Ministry of Agricultural, Food and Forestry Policies (Mipaaf) and is recognized as a traditional Sicilian agri-food product.

Almonds are a PAT product: the almond harvest takes place in the months of August-September and can be either manual, "beating", or mechanical. The drying takes place in the sun for about three days, then the product is stored in the warehouses waiting to be shelled and sometimes peeled. Sicilian cultivars have a higher content of fats, amygdalin and sugars than other almonds, which give confectionery derivatives a unique and inimitable flavor. Another salient feature is the absence of alphatoxins in the fruits, due to both the climate and cultivation techniques.
