Nubia garlic is a typical PAT product of the Nubia district located in the municipality of Paceco. The cultivation has been practiced for decades in the territory in flat areas and in a non-irrigated hilly environment. Sowing and harvesting are mainly done by hand; Even the realization of the braids is done by hand.

Slow Food Presidium:

The Presidium has brought together some small producers on the basis of a common production specification and a brand that guarantees the origin and quality of the garlic.

This cultivation is still practiced today with traditional methods that have been perpetuated over time ranging from the careful selection of bulbils, to the environmentally friendly cultivation technique, to the manual planting and harvesting up to the drying and braiding phase.

The name derives from a small district of Paceco (Trapani) and color. The production area includes the municipality of Paceco, part of the municipality of Trapani, Erice, the northern area of Marsala and Salemi. The sowing takes place between November and December and is harvested in May, partly dried on the fields. The harvest is carried out during the evening because the leaves, being more humid, allow the manual work of weaving the bulbs.
