The tuna, taken from the cold room, is cut, bled in running water, placed in AISI 316 stainless steel baskets and cooked not with steam but in water and salt in order to maintain intact the organoleptic qualities and not disperse most of the proteins. After cooking, the product is cooled and, manually, we proceed to a meticulous peeling and elimination of the thorns. The clean slices are cut into small pieces and placed inside glass jars. This phase is followed by filling the containers with olive oil or water, if the product is required natural, closing the lid with an automatic capping machine, sterilization and washing of the packages. The last phase is represented by the labeling of the jars with an automatic labeling machine, the packaging of the containers in thermo packs and the storage in special rooms.
