BLUE FISH

Grilled roast, in the oven (without tomato), prefers a WHITE ALCAMO DOC.
Fried or with tomato dressings, it prefers a SICILIAN GRILLO DOC.

TUNA

If roasted or baked a MONREALE DOC or a MENFI DOC or an ERICE DOC GRECANICO. If cooked in sweet and sour, a CERASUOLO DI VITTORIA DOCG.

CRUSTACEAN

I suggest the SALAPARUTA DOC BIANCO; however, personally, I prefer the combination in assonance with a ZIBIBBO SECCO DOC.

OCTOPUS

If the octopus is boiled, roasted or in salads, I suggest a SICILIA DOC INSOLIA, if cooked with tomatoes, olives and capers an ETNA DOC ROSSO.

SQUID AND CUTTLEFISH

If I read or in a salad, I suggest an ALCAMO CLASSICO DOC, if fried I think the best combination is the one with the MALVASIA DELLE LIPARI DOC.

SARDINES IN BECCAFICO

Ideal pairing with a CHARDONNAY SICILIA DOC.

PASTA WITH SARDINES

The most appreciated combination is the one with the INSOLIA DOC SICILIA, however in harmony the sweetness of the dish, the combination with a ZIBIBBO SECCO DOC will give surprising results.
